Hello everyone out there. It has been a while since I posted. I know I said that last time too, but college life is busy and when it is hot outside you do not want to bake and make the house even hotter. I did bake this last weekend for the girls on my floor though and these cupcakes were a hit! If you have never made brown butter before, it is easy and gives almost a caramel like flavor to what you add it to. This was my first time playing with it and I highly recommend it. These cupcakes start out with a basic cake recipe, but the process after they come out of the oven is what makes them so addicting. When you make them in mini cupcake tins they are like poppable doughnuts, and who doesn't like doughnuts?
This recipe makes about 3 dozen mini cupcakes or about a 15 regular sized ones.
What you will need:
The Cake:
3/4 cup butter, softened
3/4 cup sugar
2 eggs
1 tsp vanilla extract
1 TBS Baking powder
1 tsp salt
3 cups flour
3/4 cup milk
The Coating
2 cups sugar
2 TBS cinnamon
1 stick butter
The Frosting
1 stick butter
1 cup powdered sugar
1 tsp vanilla extract
1 TBS milk
What to do:
Preheat oven to 350F
1. Beat together sugar and butter until fluffy
2. Add eggs in one at a time until just incorporated
3. Add Vanilla
4. In a separate bowl sift together flour, baking powder, and salt
5. Alternate adding a third dry mix of ingredients with a third of the milk to egg mixture, mixing in between, until all of the flour mixture and milk have been incorporated.
6. In a well greased cupcake tin fill each tin about 3/4 full and bake for 12-15 minutes for mini cupcakes. 15-20 for average size.
7. While the cupcakes are in the oven melt one and a half sticks of butter over the stove, let sit until it starts to bubble, then stir constantly until lightly browned, and pour into a bowl. If you are going to make the frosting you can combine all the butter at this point.
8. Combine cinnamon and sugar onto long plate or wide bowl
9. Once cupcakes are out of the oven and cool enough to handle coat each side with melted brown butter, then roll in cinnamon sugar mixture.
If you decide to have the frosting...Which you should.
1. Brown your butter if your haven't already and let cool to room temperature.
2. Combine powdered sugar, butter, and vanilla. If needed add one tablespoon of milk at a time until you reach desired consistency.
3. Frost cupcakes once they are cooled.
Like I said, these are pretty dang tasty. You should try them.

Baking has always been something I have been passionate about. I also enjoy cooking. No, I am not a professional chef or baker, as you will probably see in my dishes; they aren't always the prettiest of things. I do love cooking though, and because of my family I tend to cook low calorie dishes, but I warn you, some do go out there in the calorie zone.
